Chè itself refers to any Vietnamese sweet beverage, dessert soup, or pudding. There are varieties of Chè that are made with mung beans, kidney beans, tapioca, jelly, fruit, and coconut cream.
Since we had many aged coconuts and fresh jackfruit we decided to make some sort of Chè for the day.
The recipe below is created for at least 30 individuals:
1 ½ cup of mung beans
1 2/4 cups of sugar
3 cups of shredded coconut
2 cups of sliced jackfruit
First step is to have at least 5 quarts of water boiled. Add the mung beans. While the mung beans are being cooked, I shredded some coconut and sliced up durian. After about 20 minutes, add the sugar, coconut, and jackfruit. Cook for another 10 minutes and let it cool. Viola! It’s done.
I prefer to have Chè over ice and when it has been sitting in the refrigerater for a while.
